Grilled Tender Beef and Baby Lobster With Fresh Garden Vegetables, Potatoes, and Red Wine Thyme Sauce

Bahan :
140 gr tenderloin impor
60 gr baby lobster
10 gr asparagus segar
10 gr jamur segar
10 gr baby wortel
60 cc kentang rebus
20 cc white wine
20 cc red wine
20 cc saus demiglace
1 gr mustard
1/2 gr bubuk paprika
10 gr bawang bombay
5 gr bawang putih
1/2 gr thyme
1/2 gr peterseli
10 gr mentega
1 sdt garam
1 sdt merica

CARA MEMBUAT :
Lumuri daging dengan garam, merica, bubuk paprika, dan mustard. Diamkan sampai bumbu meresap.


Lumuri baby lobster dengan garam, bawang putih, dan white wine. Diamkan sampai bumbu meresap.
Panaskan olive oil, masak daging dan baby lobster dalam 2 wajan secara terpisah hingga matang. Tumis baby wortel, jamur, dan asparagus.


Mashed Potato

Bahan :
2 buah (60 gr) kentang rebus, dihaluskan
20 ml susu cair segar
Mentega tawar
Bubuk pala, garam, dan merica secukupnya


CARA MEMBUAT :

Campur semua bumbu, aduk rata.

Saus Demiglace

Bahan :
10 kg tulang daging
500 gr pasta tomat
1.000 gr tepung terigu
10 gr bayleaf
2.000 gr bouqette garnie
10 liter kaldu sapi


CARA MEMBUAT :

  1. Panggang tulang daging 45 menit hingga kecokelatan dengan temperatur tinggi.

  2. Tambahkan mirepoix (potongan wortel, daun bawang, seledri, bawang bombay, pasta, tepung, dan air), bouqette garnie, bayleaf, dan kaldu sapi.

  3. Masak 4 jam di atas api kecil.

untuk 1 porsi

TIP :

1. Jika tidak suka, white wine bisa dihilangkan.

2. Olive oil bisa diganti dengan salad oil/vegetable oil/minyak goreng biasa.

3. Baby lobster dimasak sampai berubah warna, jangan terlalu lama.

4. Sayuran jangan dimasak terlalu lama (over cook) agar sarinya tidak hilang.

5. Daging jangan direndam air.

6. Agar tidak amis, baby lobster dilumuri lime juice atau jeruk nipis.

Ingredients:

  • 8 oz. of cream cheese
  • 1 stick of real butter
  • 2 lbs. of fresh peeled Louisiana crawfish tails
  • 1 chopped white onion
  • 1 green bell pepper chopped
  • 1 can of cream of mushroom soup
  • 2 cups of cooked white rice
  • 1 teaspoon of garlic powder
  • 1 teaspoon of red pepper
  • 1/2 teaspoons of white pepper
  • 1 1/2 cups of Velveeta cheese, grated
  • 1 cup of fried onion rings from a can
  • 2 tablespoons of butter

Instructions:

  • Use a double broiler to melt the 1 stick of butter and cream cheese.
  • In a separate skillet, melt the 2 tablespoons of butter and saute the crawfish in it. Add the onions and bell peppers to this and cook for 5 more minutes.
  • Add everything to the crawfish mixture (except for the Velveeta and onion rings)and stir.
  • Add everything to a casserole dish.
  • Place the Velveeta and onion rings on top of the mixture in the casserole dish.
  • Bake it at 350 degrees F. (when you are ready) for 30 minutes.
  • Enjoy your crawfish casserole!
